Date and Walnut Cake

This cake is very filling, so only a small slice is sufficient. However, if you are a greedy guts then a large slice will satisfy your hunger. You can eat a small slice every day, or you can eat the whole cake in one day, but you will probably struggle getting up the stairs when you go to bed. The choice is yours! 😉

 

Ingredients for the cake:

3oz (90g) margarine

8oz (250g) chopped stoned dates

1/4 pint (150 ml) boiling water

3oz sugar

1 egg

8oz (250g) self raising flour

1 teaspoon baking powder

2 oz walnuts, chopped

2Ib loaf tin

Ingredients for the butter Icing (This is optional)

112g margarine

250g  icing sugar

1 tablespoon of milk

 

Method:

Grease the loaf tin with margarine and line with baking paper. Put the dates into a bowl and pour over the boiled water and leave for around 20 minutes. Mix together the margarine, sugar, egg, sifted flour and baking powder, and stir until well combined. Add the dates, with their soaking liquid, the walnuts and mix together.

Pour this mixture into the loaf tin and bake in a preheated oven at 180c, gas mark 4 for 1 1/4 to 1 1/2 hours. The cake should be well risen, firm and when a skewer is inserted into the middle of the cake, it should come out clean.

Leave the cake to cool for about 10 minutes, turn out onto a wire rack and peel of the baking paper. Leave to cool.

The next stage is optional for the buttercream.

Mix together the margarine, icing sugar and milk until it reaches a dropping consistency. Cut the cake length ways in half, or thirds like mine and spread with the buttercream.

    Hello. thank you for your message. Someone created the blog for me and is the administrator. I can alter many things, but not all the really technical stuff. You can open a blog using Bluehost which is very reasonable and create your domain name for around £15. I do know also that if you use wordpress to host your blog they give you lots of advice to get started and using youtube videos is a great resource for learning how to begin your google analytics etc. It’s best to keep it simple to begin with, in case blogging is not for you.There are loads of plugins you can download for your blog once it’s up and running. My theme is Optima at present, but I do change it sometimes. x Pip

    Hello . Thank you for your message. I think one of the best options is to join facebook and create an account for your blog or for personal use. I have one, and I am joined to a number of groups that are based on discussions which include some of the topics I write about, such as art, painting, anxiety and depression. Also food, which is a favourite subject of mine. I hope this helps.

    I’m not sure if I’m qualified to give you information on other platforms because I only really know about wordpress, which I have had no problems with. Did you set up any security plugins for your blog?

    Hello. Thank you for your information. How do you mean running of the page? A couple of my blogger friends in America have also said they have had issues connecting to my blog. My site has recently been updated and the format for writing has changed to a block format, which I don’t like at all. I will inform my admin to try and resolve the issue. Thanks again 🙂

    I don’t know whether it’s just me or if everyone else
    encountering problems with your website.
    It seems like some of the written text in your posts are running off
    the screen. Can somebody else please provide feedback and let me know if this is happening to them as well?

      Hello. I recently wrote a post explaining the ways I choose my themes, and the way I alter the design etc on my post ‘WordPress Themes and Widgets’. I also use the ‘Canva’ website to create posters etc for my blog posts and headers. 🙂
