2 cups of white long grain rice
1 medium sized beef frying steak
2 spring onions
1 cup of frozen peas
2 tbls sesame oil
3 or 4 tbls light soy sauce
1 quarter tsp chilli powder
Wash the rice until the water runs clear. Then bring the rice up to the boil and cook according to the packet instructions. When the rice has a slight bite, remove and drain. Pour boiling water over the rice to get rid of the starch. Leave to drain.
Meanwhile, heat the sesame oil in a wok or frying pan on a medium heat. Cut the beef into thin slices and add to the wok and cook for a 2 or 3 minutes according to taste. Remove and set aside.
Add the peas and cook for a few minutes. When cooked, push them to the side of the wok and add 2 beaten eggs. Scramble these for a minute, then mix together with the peas. Add the chopped spring onions and fry for 30 seconds. Take off the heat and add the drained rice, soy sauce, chilli powder and mix together really well.
If you use chicken pieces, use the same method, but make sure the chicken is cooked through first. Cooked prawns can be added to the peas right at the end.
