Spicy Chicken with Cashews

Here is another quick main meal you can cook in record time. From start to finish this takes about 20 minutes tops, and is healthy and packs a punch. My children love this but I don’t include the mushrooms, because they don’t like them. I love them however, so if you do, put plenty in.

Ingredients:

Chicken breast or thigh meat. Generally one per person

One green pepper chopped roughly

4 large mushrooms quartered

Handful of cashew nuts

1 or 2 cloves of garlic

Oil that will heat to a high temperature/Groundnut

1 tbls of soy sauce

1 tps of chinese 5 spice powder

1 tbls of chinese cooking rice wine/Shaohsing

1 tps of chinese chilli garlic sauce/Jar

3 or 4 Spring Onions/Scallions

1 packet of noodles per person

 

Method:

Put a wok or heavy based frying pan onto a medium to high heat and fry the sliced chicken in oil for 5 minutes or until nearly cooked through. To the chicken add grated garlic, peppers, mushrooms and fry for 2 minutes. Do not overcook! Next add the soy sauce, chilli garlic sauce, chinese 5 spice powder, rice wine and half a cup of water. This depends on what you personally like. My children like quite a bit of sauce, so add the water according to your taste.

Put your noodles in boiling hot water and cook for a few minutes, then drain when soft. Leave aside.

Just before serving, add the chopped spring onions, cashews and stir for one minute only. Please check your chicken pieces are cooked thoroughly. They should be white though out, with no pink inside.

Serve on top of the noodles.
