Pip’s Paella

Paella

Ingredients:

A hand full of white rice for each person. I use Basmati.

 1 tbs oil

Diced chicken

1 red pepper

Frozen prawns thawed

Handful of garden peas

100g Chorizo

Pinch of Saffron

1 tsp Turmeric powder

1 Chicken stock cube

1 tsp Paprika

Pinch of salt and pepper

Method:

Fill a cup with boiling water and add the chicken stock cube, saffron and turmeric powder. Leave to dissolve. Meanwhile, boil the rice for the recommended time, drain and leave to stand. Good tip here-When I pour the rice into the colander, pour over boiling hot water from the kettle as this will get rid of the starch- therefore, no claggy rice. Not my favourite word, but there it is. Use a fork to separate the grains.

Meanwhile, fry the chicken until just about cooked and add the pepper and paprika. Fry this for 1 minute, then add the stock mixture from the cup, chorizo, prawns and peas.  Stir for a few minutes until the liquid has just about evaporated, add the rice and mix.

Voila! Bon appetit x

I am a mother of two children, and have had many experiences in my life that I have been through and had to overcome. I feel it would be beneficial (at least to me, and perhaps you) to share my experiences. I’d love to hear your comments and suggestions. x
