Short crust Pastry
125g/4oz plain flour
Pinch of salt
55g/2oz butter, cubed
30-45ml/2-4 tbsp. cold water
4 Eating Apples
To the flour and salt, add the butter and crumble between your fingertips until the mixture resembles fine breadcrumbs. Add a tablespoon of cold water at a time until the mixture binds together. Form into a ball and handle as little as possible; wrap in cling film and put in the fridge for 15 minutes to chill. Alternatively, buy a block of ready- made short crust pastry which I did and it will be a lot easier.
Slice the 4 peeled eating apples very thinly and lay them on a plate, sprinkle 4 tablespoons of water over the apples. Put in the microwave until a little soft, about 4 minutes.
Sprinkle over the apples 4 tablespoons of sugar and put aside.
Meanwhile, flour your surface and roll out your pastry to cover your greased dinner plate, add the apples, then roll out your remaining pastry and cover, sealing the edges with a fork and decorating the top. Brush with a beaten egg and sprinkle over another tablespoon of sugar.
Put in the oven at Gas Mark 4 and cook for about 20-25 minutes.
