Easy Flapjacks with Coconut and Chocolate
I love making these because they are quick and my kids really enjoy eating them.
Ingredients:
115g (4oz) butter or margarine
115g (4oz) sugar
28g (1oz) desiccated coconut
8 to 10 pieces of your favourite milk or plain chocolate (Galaxy in this case)
85g (3oz) golden syrup
225g (8oz) porridge oats
Method:
Preheat the oven to 180 degrees/350 F/Gas 4. Grease and line a round tin with baking paper.
Melt the butter or margarine, sugar and syrup together in a pan over a saucepan of simmering water. When melted, take off the heat and stir in the porridge oats and coconut. Pour the mixture lightly into the tin spreading to the edges, but do not pack the mixture down too hard into the tin, else the flapjacks will be hard when they are cooked. Bake for around 20-25 minutes. Do not overcook.
When the flapjacks are slightly brown around the edges, take out of the oven and leave to cool down for about 5 to 10 minutes. Melt the chocolate over a saucepan of simmering water, do not allow the steam to enter the chocolate as it will ruin. Alternatively, melt the chocolate in a bowl in the microwave for about 30 seconds to minute, checking carefully in case it burns.
Now drizzle the melted chocolate over the flapjacks, put into the fridge and leave to set for about 30 minutes.
These are gorgeous to eat!
